This is easily my favorite cereal. We make it on Sunday's and eat it the rest of the week. Serving size is 1/2 cup, which I admit doesn't sound like much but is actually very filling!
Though most people can't do this we actually tap 2 maple trees in our yard every year and make the maple syrup. It's fun and probably saves us $100 year in syrup.
Ingredients
- Cooking Spray (I use a Silpat on my pan and don't need cooking spray. These things are great!)
- 3 cups old-fashioned oats
- 1/2 cup chopped raw, unsalted walnuts
- 1/2 cup chopped unsalted almonds
- 1/2 cup chopped unsalted pecans
- 1/2 cup maple syrup
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup raisins, optional
Directions
Preheat the oven to 300 degrees F. Spray a large baking sheet with cooking spray.
In a medium bowl combine the oats, nuts, maple syrup, salt, cinnamon and the raisins, if using. Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes. Transfer the sheet to a cooling rack and let cool completely. Store in the refrigerator in an airtight container.
We also often add raw pumpkin seeds. The pumpkin seeds also add some Vitamin K, Iron and Copper, and are a very good source of Magnesium, Phosphorus and Manganese!
